Im wanting to set up a box that I can use as a Bluetooth receiver to play though my stereo as well as all the other ATV things. Can the nexus tv and the like do this?

Google music is a good idea.
If you trying to stream any audio your phone makes:
What is your phone model? You may be able to root it and capture any audio with Allstream or AirAudio to an AirPlay app on the androidtv (AirReceiver, Airtight, WaxRains AirPlay/DLNA.
I'm interested in doing this as well. Specifically I want to use Android TV to stream my music through speakers instead of playing it over Bluetooth which uses my phone battery.
You could also look into hacking a Chromecast along with your speakers to do the same.
I use Android app Bubble UPnP to stream phone audio to my GTV unit (yes, I know this is for AndroidTV but my Logitech Revue is still viable).
GTV then streams to my HDMI tv sound system. Works pretty great, and can control audio stream directly from my phone like a remote!
If any music apps you use can cast then your phone doesn't have to stream it over like bluetooth.
I cast google music to my chromecast that is plugged into my receiver.
Plex works well if you're looking to steam local music.
They just released an update which added:
Music videos from Vevo integrated into the UI (think you need to be a plex pass user for this).
Smart playlists
Playlists based on moods
And generating a playlist of similar songs (a pandora-like "radio station" made up of your own music)
If you use google play music you can set that up to stream music through you receiver. Its free for you to upload at least 20k songs though they may have increased it. You can also pay to stream any song from their library Spotify style.
