Will all cast ready apps work on Android TV devices? If so, are there any compatibility issues with different hardware?

My experience is mostly yes. One exception I am aware of is Netflix to the Razer Forge TV. The Forge TV will not do HD Netflix, there is no compatible Netflix app in the play store for the Forge TV and casting does not work (screen casting will but is crappy without good hardware)
