It kinda depends on your TV's settings, I know my Samsung TV has an option to turn off devices via HDMI-CEC when it's switched off but this isn't always supported by all TV manufacturers. You should have a look in your TV settings to see if it has that feature, if it does the Nexus player should comply.
As long as the tv supports it, which you indicated it does. One caveat is you will need to use the tv's remote for volume and turning everything off (sleep for the the Nexus) because Google are jerks. No hardware keys on the Nexus remote for that and no software options either (Google needs to add an extra long press of the home key which could pop up a menu for these things).
My tv without cec will pause video on the nexus player when the tv is turned off.
