Apps depends on what you want to do: Kodi is a great place to start if you want it to be a fully functional media centre. You then have a bigger question of what Kodi plug ins to add. Some people install emulators, some stream games (either natively like the Shield or by adding something like Remotr) and others just want to watch television.
What are you looking to achieve with your purchase?
There are a few different calibration settings to tune fore apps. One is just [Apps] and the other is [Apps video] or something like that. It's worth calibrating them so you don't have to worry about it later. CineMotion does a great job with Plex/HBO Go/Netflix etc.
It's a great TV and the Android is really nice. You have an AmazonInstant Video app which most other people without a non-Amazon streaming device don't have.
But make no mistake about it: you primarily purchased a great television, not a great media streaming device. Sure, it's good enough but if you take your media streaming very seriously, like you're a cord cutter, get an add on device.
To get rid of some of the bloatware you'll need to remove the Sony Shelf app and the Sony Select App.
The apps are all user specific. Get what you think you'll watch. Plex is nice if you maintain a large collection of digital movies.
Start using Google Cast for everything.
