What is the experience supposed to be when hooking one of these USB ethernet adaptors ? Do i need to enable something in the settings? I was hoping it was plug and play but it doesn't appear to be. Starting to get worried it's not compatible.

Nope, plug it in and maybe you have to restart. Other than that, it's automagic.
Be aware, I tried 4 or 5 different adapters and my top download speed was 10Mbps using a 10/100 adapter. I always got 100Mbps+ on WiFi so I've stuck with that.
