I really want to remove sling, ESPN and any other app I'm not using. Doesn't seem like its possible though and may require rooting (if it can be rooted)?

Just go to your apps and disable the apps. However, like was said earlier, you may just being seeing the suggested apps (ESPN isn't installed by default). In that case just disable XiaomiLeanbackCustom and restart.
Thanks guys. Looks like disabling the launcher took care of both issues
Go into settings>apps and find XiaomiLeanbackCustom (I think that's it, may be something similar) and disable it. It'll remove the row and you'll have the normal leanback launcher.
