So I was wondering if the brand or size of the hard drive matters when making it as internal storage. I was able to get it to work with a WD 1 TB but it crashes with other hard drives i've tried. I've tried 2TB 3 TB 4 TB all seagate. Always crashes.

The size of the drive doesn't matter for whether it'll work for storage, aside from fitting everything you need to fit.
Larger capacity hard drives tend to be faster, all else equals, due to the increased areal density of the platters.
Seagate drives are renowned for failing, so I wouldn't recommend using them in any application.
Could you be more specific by what you mean that "it crashes"? Are you experiencing data loss? Is the device failing to boot? Does it work for a short time and then fail? Please be specific.
