I have purchased the international version of the Mi TV Box and turns out there's a major issue with my device.
Overall it's smooth and definitely a high quality product, but for some reason I get a very weird color issue every few minutes.
The colors just gets very weird, here's a picture I took;

The picture goes to normal after a couple of minutes.
Is this a known, fixable bug? What can I try here?
Should I just return it?

Your Mi Box is not actually faulty
What you have is a YCbCr colorspace error that is common problem with some older Sony & Philips TV's - it was never fixed by these TV manufacturers either. It is their fault.
If you search the Net you will find Apple TV users also had this specific problem with these particular TV's.
The fix is a Firmware workaround to output a RGB colorspace to these specific problem TV's. But Xiaomi in their Firmware have not implemented this RGB workaround like some other AMLogic Android sellers have.
Solution is to avoid all media players that do not have a user selectable Android setting to output RGB.
You can try fiddling with TV video settings and look for anything to do with RGB, YCbCr etc, but I suspect you will have to return the Mi Box.
The nVIDIA Shield has user selectable colorspace outputs.
