My gramps can't really figure out the LeanBack Launcher, I just feel bad trying to help him navigate through it. Is there an alternative launcher or ROM that could make things easier? Maybe use Kodi and route all my apps through that?

What exactly is making it difficult? There is no way to switch launchers (I hate that), but maybe we can think of workarounds to make whatever difficulties easier.
I find Kodi a pain in the ass to setup, but if you have experience or want to learn it than it might help. I think you can startup on Kodi too.

Necta launcher is very easy to use, which is designed for elderly. Please try. My grandmother like it.
Get him a Roku.
Really having a hard time imagining anything easier than the leanback launcher.
