Is there any Android TV box that supports this resolution without stretching? I got a projector recently, and I figured I may as well keep something connected to it, rather than having to connect my laptop. Anything will work.

Resolution stretching is something that usually happens on the display side, not the device side. Check your projector settings and turn it off if possible.
Does your projector not support 720p? It'd just have a row of black pixels on the top and bottom.
Just set the projector to not stretch
