I'd recommend Stikbold or Chariot. I've had great fun playing those with my son.
Nba jam had an ATV build with local co-op
Since you have a shield, why not some pc games to stream? Lovers in a dangerous spacetime feels like a perfect match for your case. (except the platform)

Although it's your call on whether you'd consider it violent or not. Personally I wouldn't, but I could appreciate that some might.
Anything from jackbox games. You can use your cell phone as a controller and there's a family mode for kids.
Just avoid 'monster seeking monster' on jackbox party pack 4, that game isn't for families.
Look into emulators for retro games, they're very less violent

Personally I would use RetroArch with all the emulators and two usb controllers, nes, snes, genesis, arcade, etc.
