Dolphin bar works with the Shield but sadly it uses an older protocol to communicate the controller actions. So no game recognizes them. Using dolphin emulator the remotes work perfectly in the games but the games themselves run at an unplayable speed. I haven’t tried in a few months but I don’t expect any change.
The bar is just for pointing, so it would'nt serve any purpose with the Shield

The sensor bar is a bit of a misnomer, it doesn't do any kind of sensing itself. It's basically a dumb wire that includes two sets of IR LEDs (at least mine is two sets of 5 for 10 total, you can confirm this by pointing camera at it while it's on) that the IR camera in the front of the Wii remote uses to determine where on the screen you're pointing and partially for orientation. You'll need something like a Dolphinbar which includes a Bluetooth module of its own and translates the inputs to gamepad/mouse/keyboard ones
