Alternatively, look back several months and flash 6.0 build 1901 and evaluate performance. Once you move to Oreo, there is no chance to downgrade to 6.0
I mean, Settings --> About --> Update should get it to update. Otherwise, they may be withholding the Oreo update at the moment due to stability issues. I have no clue if they are doing that, but the version that's eventually loading to the device is having boot and unresponsive remote issues.
