I have two of those and both of my Mi Box's work great. Even after waking up I have no issues.

I have 2 of them. I have 100Mb internet so the fact that it's gigabit but only connected via a USB 2.0 port (limiting it's gigabit potential) is irrelevant for me.
I'm using this on my MiBox without any issues. It has the same AX88179 chipset, so the UGREEN adapter should work for you.

did you switch in developer settings to ethernet under USB settings (not sure 100% about name)?
