You can activate USB-debug mode in Developer settings and then usb-lan will stop working until you turn off debugging again
I take it you're you are using a USB ethernet? There's no option to turn it off other than to unplug.
It depends if box has that option in network setting. In nvidia shield it’s available which allows you to turn Ethernet off without the need to remove the cable.
