You can't simply install a HDD and load a random OS onto it. That's not how it works.
I can say with confidence that zero people have done that.
Just replace the drive. There's currently no jailbreak or other OS for the One. :/

My car's suspension broke and I got it converted into a small plane. I'm sure you'll be able to convert your broken console into an Android TV, or maybe a Windows laptop with a bit of luck! Everything's possible, just needed to ask around to figure out how to do it.
