I am trying to make my shield tv easy to use for the family with a basic clean interface, i have disable all other channels and only have apps showing.
We have about 8 apps which i would like to have in a grid format so you can see all the apps without the need to scroll .
remove customize channel button.
remove search bar at top.
if poss turn the setting button into an app icon .

I seem to be describing this on loads of threads, but I set Kodi as my custom launcher, and spent a bit of time setting up Titan skin exactly how I want it. You can achieve everything you listed for a couple hours worth of tweaking, and lock it all down so no one screws with it.

Atv launcher, lets you customize the icon column count. So you could easily fit 8.
You can remove every channel via the settings (all the way down) and just keep the top favourite apps.
HAL Launcher is a good bet. You can use ADB to delete the Leanback Launcher altogether but be sure to install another launcher before you delete it.
why don't you just leave it on the app drawer?

Sideload channel / application launcher is probably the one you want. You can create your own rows of apps etc..
