I have a Philips TV and it has three options to output audio:
- Multi-Channel
- Multi-Channel Bypass
- Stereo Uncompressed
What's the difference between Multichannel and Multichannel Bypass? I've looked into their product manual and help menu but it doesn't explain that well

I'm pretty much guessing here, but Multi-Channel Bypass might mean to pass the original source audio, as it is to your sound system, so the sound system will do the decoding. In other words pass-through. That would usually require a sound system which support multiple codecs.
The non-Bypass option might mean that the TV will do the decoding (of lets say, AAC or DTS) and convert it into more common DD.
