Trying to figure out if I can watch Plex through my Shield (connect to a projector with no WiFi) and run the audio through the homepod.

Gotta agree with the other guy, HomePods are pretty useless at playing audio using anything other than Airplay 2. I have an AppleTV 4K and even the setup with that is super janky. I ended up selling mine & getting a SONOS system (forewarning that it's a pretty pricey alternative)
If you're really dedicated you could buy a Raspberry Pi and install BabelPod & Airtunes but even that's a crazy workaround that has some pretty gnarly latency, it's probably correctable in software but IMO sounded pretty terrible when I tried it.
Nope, there's no input into the homepod besides airplay, and even if you did, you might get audio sync issues
