I added a 32gb card to it via a USB-C hub. Selected “add as internal storage” but when I go to X-Plorer and look it still shows the device at 1gb available. Not sure what else I need to do?

What USB-C do you have, I wanna get one but not sure which one works best.
You need to "move the data" to the new storage, go to settings -> device settings -> storage -> select the new one and then select the option to move the data.
