Nothing will happen if you give "full" access of your google account to your TV.
There isn't any security reasons as of yet for doing that, though if you fear you can install an antivirus app from the Play Store, I've seen a couple there.
Use SmartTubeNext .
Factory reset the TV. Use a throwaway/other account for the main TV setup, then in the Youtube app, sign out, then sign back in using the account you want to authorize for Youtube only.
