my question is should I go with a less popular device that runs android and has 4GB RAM instead? or is 2GB actually enough?

I have the Chromecast and it runs 4K with Atmos quite smoothly but I'm not sure about Plex or a USB
2gb RAM is plenty of a streaming device. They don't multitask and if you are not playing games the apps are designed to work on devices with 3gb RAM. IPTV doesn't need any more RAM than anything else. Neither does Kodi. disc space is a whole other thing as far as Kodi is concerned. Kodi can be built up to take up a lot of space if you like addons. People have been running Kodi on Fire TV devices with 1.5gb RAM forever.
What 4GB ram streamer are you shopping for???
There are very few Google Certified Androidtv devices with 4GB Ram, and those are mainly coming from Mecool, which has a poor track record of firmware updates and/or bug fixes.
If looking at a generic Android (AOSP) set-top-box, then those regularly have 4GB ram configurations and bug filled firmwares, and for streaming 4K media all you really need is 2GB of ram and a good quality firmware.
Android has great memory management. 2gb is the minimum I'd use. Should be able to play 4k just fine. The shield has 3gb because it's also a gaming box.
Depends on what you're gonna stream. If you gonna use only the official streaming apps (Netflix, Disney+, HBO etc) then 2GB is enough.
Are you gonna use unofficial apps, kodi, IPTV, emulation etc then 4GB is the better option.
