I have to use my Xbox to get surround sound. The android tv app doesn’t support it. Why? Just curious.
Edit: or could it be that my surround sound system doesn’t support Dolby digital plus and just regular Dolby digital?

What's your TV? Does it support the latest Hulu app ?
Hulu's help page regarding 5.1 audio doesn't help much.
Does your app say it's in 5.1 below the description of the movie. I know deep water with Ben Affleck says 5.1 right below the description. Now to be honest with you I hardly ever hear the back speakers the more I think about it I'm not even sure if I've ever heard them on Hulu. I have a brand new system and it supports Dolby digital and says I'm getting a Dolby digital signal. On that movie.
Hulu's track record on Android TV support is pretty awful. For a long time they just never bothered to update the Android app. I recall using the Shield TV back in 2017 and the Hulu app had numerous bugs and topped out at 720p video, even though other versions of the app on tvOS and Roku were newer and higher quality streaming.
Things have gotten better, but if I had to guess Hulu's devs just haven't bothered to update the app with surround sound support.
